Ingredients
1 tbsp sunflower oil
800ml coconut milk
185g Malay Taste Rendang Curry paste
1.5kg beef braising or stewing steak, cut into cubes
2 tbsp freshly chopped coriander

For a quick midweek meal made in under 20 minutes use rump, or sirloin steak, cut 450g into strips and add 200ml coconut milk. Prepare as below, and simmer for 12-15 minutes, stirring occasionally until the beef is tender.
Preparation
Heat the oil in a wok and stir in 1tbsp of the coconut milk and the curry paste. Stir-fry for 1-2 minutes, until the aromas are released.
Add the beef and stir fry until browned, then stir in the remaining coconut milk and bring to the boil.
Reduce the heat and simmer uncovered for around 2-3 hours minutes, stirring occasionally until the beef is tender and coated in a thick, condensed sauce. Add a little water if the sauce becomes too dry. Stir in the coriander.
Serve immediately with steamed rice.
